Paleo Chicken Fried Rice (Cauliflower Rice)

Ingredients

  • 1 head cauliflower, riced (or 4 cups pre-riced cauliflower)
  • 1 lb chicken breast (diced)
  • 3 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 2 tbsp avocado oil, divided
  • 3 eggs, beaten
  • 1 cup carrots
  • 1 cup peas (omit for strict Paleo/Whole30)
  • 4 green onions (sliced)
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • salt and pepper, to taste

    Heat 1 tbsp avocado oil in a large wok or skillet over high heat. Cook chicken until browned and cooked through, about 5 minutes. Remove and set aside.

    Add remaining oil. Scramble eggs in the wok, breaking into small pieces. Remove and set aside.

    Sauté carrots for 2 minutes. Add garlic and ginger, cook 30 seconds.

    Add riced cauliflower and cook for 4-5 minutes, stirring frequently, until tender.

    Return chicken and eggs to the wok. Add peas (if using), coconut aminos, and sesame oil. Toss everything together.

    Season with salt and pepper. Garnish with green onions and serve.
