Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • salt and pepper
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 cup s shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 green onions, sliced
  • 1 tbsp butter, melted

Steps

    Bake potatoes at 400°F for 50-60 minutes until fork-tender. Let cool slightly.

    Cut each potato in half lengthwise. Scoop out the flesh, leaving about 1/4 inch shell (save the flesh for another use).

    Brush potato skins inside and out with olive oil and melted butter. Season with salt and pepper.

    Place on a baking sheet and bake at 400°F for 10 minutes until crispy.

    Fill each skin with cheddar cheese and crumbled bacon.

    Bake another 5 minutes until cheese is melted.

    Top with sour cream and green onions. Serve hot.
