Ingredients

  • 4 ears of corn, husked
  • 2 tbsp mayonnaise
  • 2 tbsp Mexican crema or sour cream
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1 tsp chili powder (or Tajín)
  • 1/4 tsp cayenne pepper
  • juice of 1 lime
  • fresh cilantro, chopped
  • lime wedges, for serving

    Grill corn over medium-high heat, turning frequently, for 8-10 minutes until charred in spots.

    Mix mayonnaise and crema together. Brush generously over each ear of grilled corn.

    Roll or sprinkle cotija cheese all over the corn.

    Dust with chili powder and cayenne.

    Squeeze lime juice over the top and sprinkle with cilantro.

    Serve with extra lime wedges.
