Ingredients
- 1 cup farro or quinoa
- 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
- 2 tbsp olive oil, divided
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cup cherry tomatoes, halved
- 1 English cucumber, diced
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 cup s baby arugula
- 3 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 clove garlic, minced
- salt and pepper to taste

Cook farro or quinoa according to package directions. Let cool slightly.

Toss chickpeas with 1 tbsp olive oil, smoked paprika, and cumin. Roast at 400°F for 20 minutes until crispy.

Whisk remaining olive oil, lemon juice, red wine vinegar, garlic, salt, and pepper for the dressing.

Assemble bowls with grains, arugula, roasted chickpeas, tomatoes, cucumber, olives, red onion, and feta.

Drizzle with dressing and serve.
