Pressure Cooker Spiced Rice Pudding

Ingredients
- 1 cup basmati rice (rinsed)
- 3 cup milk
- 1 can coconut milk (14 oz)
- 1/2 cup sugar
- 6 green cardamom pods, lightly crushed
- 1/2 tsp cinnamon
- pinch saffron threads, optional
- 1/4 cup pistachios
- 2 tbsp raisins
- 1 tsp rose water, optional

Add rice, whole milk, coconut milk, sugar, cardamom pods, cinnamon, and saffron to the pressure cooker.

Lock lid and cook on high pressure for 10 minutes.

Natural release for 10 minutes. Stir the pudding — it will be slightly loose but thickens as it cools.

Remove cardamom pods. Stir in rose water if using.

Serve warm or chilled, topped with chopped pistachios and raisins.
