Ingredients
- 1 block tofu (14 oz; drained and crumbled)
- 2 tbsp olive oil
- 1/2 onion (diced)
- 1 bell pepper (diced)
- 2 cup spinach
- 2 cloves garlic (minced)
- 1/2 tsp turmeric, for color
- 1 tsp cumin
- 1/2 tsp paprika
- 2 tbsp nutritional yeast
- 1 tbsp soy sauce or tamari
- salt and pepper, to taste
- avocado slices and hot sauce, for serving

Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for 4 minutes.

Add garlic, cook 30 seconds. Add crumbled tofu, turmeric, cumin, and smoked paprika.

Cook for 5-6 minutes, stirring occasionally, until tofu is heated through and slightly golden.

Add spinach and stir until wilted. Stir in nutritional yeast and soy sauce.

Season with salt and pepper. Serve with avocado slices and hot sauce.
