Pressure Cooker Filipino Chicken Adobo

Ingredients
- 3 lb chicken thighs and drumsticks
- 1/2 cup soy sauce
- 1/3 cup white vinegar
- 1 head garlic , crushed (8-10 cloves)
- 3 bay leaves
- 1 tbsp black peppercorns
- 1 onion (quartered)
- 2 tbsp vegetable oil
- steamed jasmine rice, for serving

Using the sauté function, heat vegetable oil and brown chicken pieces on all sides in batches. Remove and set aside.

Add onion and garlic to the pot, sautéing for 1 minute.

Pour in soy sauce and vinegar, scraping up any browned bits from the bottom.

Return chicken to the pot. Add bay leaves and peppercorns.

Lock lid and cook on high pressure for 15 minutes. Natural release for 5 minutes, then quick release.

Remove chicken. Switch to sauté mode and reduce the braising liquid until slightly thickened. Serve chicken over jasmine rice with sauce spooned over the top.
