Ingredients

  • 2 cup s all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 6 -8 tbsp cold water
  • 3 medium potatoes, boiled, peeled, and cubed
  • 1/2 cup green peas
  • 1 tbsp vegetable oil, for filling
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp amchur (dried mango powder) or lemon juice
  • salt to taste
  • oil for deep frying
  • tamarind chutney and mint chutney, for serving

    Make the dough: mix flour, salt, and oil until crumbly. Add water gradually to form a firm dough. Cover and rest 20 minutes.

    For the filling: heat 1 tbsp oil, add cumin seeds until they pop. Add peas and cook 2 minutes. Add potatoes and all spices. Mix gently and let cool.

    Divide dough into 6 balls. Roll each into an oval and cut in half. Each half becomes a cone.

    Form each half-oval into a cone by folding and sealing the straight edge with water. Fill with potato mixture and seal the top edge.

    Heat oil to 325°F. Fry samosas in batches for 6-8 minutes, flipping once, until deep golden and crispy.

    Drain on paper towels. Serve hot with tamarind and mint chutneys.
