Churros with Chocolate Sauce

Ingredients
- 1 cup water
- 1/3 cup sugar
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 1 cup all-purpose flour
- vegetable oil for frying
- 1/2 cup sugar mixed with 1 tsp cinnamon, for coating
- 4 oz semi-sweet chocolate, chopped
- 1/2 cup heavy cream
- 1 tsp vanilla extract

Bring water, 1/3 cup sugar, salt, and 2 tbsp oil to a boil in a saucepan. Remove from heat and stir in flour until a dough ball forms.

Transfer dough to a piping bag fitted with a large star tip.

Heat 2 inches of oil in a pot to 375°F.

Pipe 4-6 inch strips of dough directly into the hot oil. Fry for 2-3 minutes per side until golden brown.

Drain on paper towels and immediately roll in the cinnamon-sugar mixture.

For chocolate sauce: heat cream in a small saucepan until simmering. Pour over chopped chocolate and stir until smooth. Add vanilla.

Serve churros warm with the chocolate dipping sauce.
