Ingredients

  • 1/2 cup chia seeds
  • 2 cup coconut milk (or any plant milk)
  • 2 tbsp maple syrup or honey (use maple for vegan)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • pinch salt
  • mango, kiwi, and passion fruit, for topping
  • coconut flakes and sliced almonds, for topping

Steps

    Whisk chia seeds, coconut milk, maple syrup, vanilla, cinnamon, and salt in a bowl.

    Stir well after 5 minutes to break up any clumps.

    Cover and refrigerate for at least 4 hours or overnight.

    The pudding should be thick and gel-like. Add more milk if too thick.

    Serve in bowls topped with tropical fruit, coconut flakes, and almonds.
