Miso-Glazed Black Cod (Nobu-Style)

Ingredients

  • 4 black cod fillets (6 oz each)
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 tbsp sugar
  • 1 tbsp soy sauce
  • pickled ginger, steamed rice, and sautéed bok choy for serving

    Whisk miso, mirin, sake, sugar, and soy sauce until smooth. Coat cod fillets generously and marinate in the refrigerator for at least 2 hours (overnight is ideal).

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Gently wipe excess marinade from the fillets (leave a thin coating). Place on the baking sheet.

    Broil on high for 8-12 minutes until the top is caramelized and bubbly and the fish flakes easily.

    Watch carefully — the sugars in the miso glaze can go from perfectly caramelized to burnt quickly.
