Vegan Chickpea Salad Sandwich

Ingredients
- 2 cans chickpeas (15 oz each; drained and rinsed)
- 1/4 cup vegan mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 2 stalks celery (finely diced)
- 2 tbsp red onion (finely diced)
- 2 tbsp dill (chopped)
- 1 tbsp capers (drained and chopped)
- salt and pepper, to taste
- 8 slices grain bread, toasted
- lettuce, tomato, and sprouts, for topping

Mash chickpeas in a bowl with a fork, leaving some chunks for texture.

Mix in vegan mayo, Dijon, lemon juice, celery, red onion, dill, and capers.

Season generously with salt and pepper.

Pile the chickpea salad onto toasted bread with lettuce, tomato, and sprouts.

Slice in half and serve.
