Ingredients

  • 2 cans chickpeas (15 oz each; drained and rinsed)
  • 1/4 cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 stalks celery (finely diced)
  • 2 tbsp red onion (finely diced)
  • 2 tbsp dill (chopped)
  • 1 tbsp capers (drained and chopped)
  • salt and pepper, to taste
  • 8 slices grain bread, toasted
  • lettuce, tomato, and sprouts, for topping
