Thai Peanut Chicken Satay

Ingredients
- 1 1/2 lb s boneless skinless chicken breast, cut into thin strips
- 1/4 cup soy sauce
- 1 tbsp curry powder
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
- wooden skewers, soaked in water
- 1/2 cup creamy peanut butter
- 3 tbsp soy sauce, for sauce
- 2 tbsp lime juice
- 1 tbsp sriracha
- 1 tbsp honey
- 2 tbsp warm water
- crushed peanuts and cilantro, for garnish

Marinate chicken strips in 1/4 cup soy sauce, curry powder, brown sugar, and oil for at least 30 minutes.

Thread chicken onto soaked wooden skewers in a weaving pattern.

Whisk peanut butter, 3 tbsp soy sauce, lime juice, sriracha, honey, and warm water until smooth for the dipping sauce.

Grill skewers over medium-high heat for 3-4 minutes per side until charred and cooked through.

Serve with peanut sauce, garnished with crushed peanuts and cilantro.
