Pressure Cooker Chocolate Lava Cakes
Ingredients
- 4 oz dark chocolate (70% cacao; chopped)
- 1/4 cup butter
- 2 eggs
- 2 egg yolks
- 1/4 cup granulated sugar
- 2 tbsp all-purpose flour
- 1 tsp vanilla extract
- pinch salt
- cooking spray
- 1 1/2 cup water, for the pressure cooker
- whipped cream and fresh raspberries for serving

Melt chocolate and butter together in a microwave or double boiler. Stir until smooth and let cool slightly.

Whisk eggs, egg yolks, and sugar until thick and pale. Fold in melted chocolate mixture, flour, vanilla, and salt.

Spray 4 small ramekins with cooking spray. Divide batter among them. Cover each with foil.

Pour 1.5 cups water into the pressure cooker and place the trivet inside. Arrange ramekins on the trivet.

Lock lid and cook on high pressure for 7-9 minutes (7 for extra gooey centers, 9 for slightly set).

Quick release pressure. Carefully remove ramekins, let rest 1 minute, then invert onto plates. Serve with whipped cream and raspberries.
