One-Pot Creamy Tuscan Sausage Pasta

Ingredients
- 1 lb Italian sausage, casings removed
- 12 oz penne pasta
- 3 cup chicken broth
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 3 cup baby spinach
- 1/2 cup sun-dried tomatoes (chopped)
- 1/2 cup parmesan cheese
- 1 tsp Italian seasoning
- salt and pepper, to taste
- basil for garnish

Brown sausage in a large pot over medium-high heat, breaking into crumbles. Drain excess fat.

Add garlic and cook 30 seconds. Pour in chicken broth and scrape up any browned bits.

Add pasta, heavy cream, sun-dried tomatoes, and Italian seasoning. Stir and bring to a boil.

Reduce heat, cover, and simmer for 12-14 minutes, stirring occasionally, until pasta is al dente and sauce has thickened.

Fold in spinach and parmesan. Stir until spinach wilts and cheese melts into the sauce.

Garnish with fresh basil and extra parmesan.
