Vegan African Peanut Stew

Ingredients
- 2 tbsp coconut oil
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 2 sweet potatoes (peeled and cubed)
- 1 can tomatoes (14 oz)
- 4 cup vegetable broth
- 1/2 cup natural peanut butter
- 1 can chickpeas (15 oz; drained and rinsed)
- 4 cup collard greens or kale
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 tsp salt
- cilantro and crushed peanuts, for topping
- rice, for serving

Heat coconut oil in a large pot. Sauté onion for 5 minutes. Add garlic and ginger, cook 1 minute.

Add sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil and simmer 10 minutes.

Stir in peanut butter until fully dissolved into the broth.

Add chickpeas, collard greens, cumin, cinnamon, cayenne, and salt. Simmer 15 more minutes until sweet potatoes are tender and greens are wilted.

Serve over rice topped with cilantro and crushed peanuts.
