Quick White Wine Mussels with Garlicky Charred Sourdough

Ingredients

  • 3 lb live mussels (PEI or local), scrubbed and beards pulled
  • 8 thick slices of sourdough or country loaf (about 1-inch thick)
  • 3 tbsp extra-virgin olive oil, divided
  • 4 tbsp unsalted butter
  • 1 large shallot, finely diced
  • 8 cloves garlic, 6 thinly sliced and 2 left whole and halved
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1 cup low-sodium chicken or seafood stock
  • 1 lemon, halved
  • 1/2 cup fresh flat-leaf parsley, roughly chopped
  • 2 tbsp fresh chives, minced
  • Flaky sea salt and freshly cracked black pepper, to finish

    Scrub the mussels under cold running water and pull off any beards. Tap any mussel that's open — if it doesn't close within a few seconds, it's officially dead and goes in the trash. We do not negotiate with the deceased. Drain the keepers in a colander while you set up everything else.

    Brush the sourdough slices on both sides with about 2 tablespoons of olive oil. Heat a wide, lidded stainless-steel skillet or enameled Dutch oven over medium-high heat until it just starts to smoke. Press the bread into the dry pan and char hard for 1 to 2 minutes per side. You want real blackened edges, not a tan. Rub each charred slice with the cut side of the halved whole garlic cloves and a pinch of flaky salt. Stack on a plate and tent with foil.

    Wipe the pan quickly with a paper towel and return it to medium heat. Melt the butter with the remaining tablespoon of olive oil. Add the shallot and red pepper flakes and sweat for about 2 minutes until translucent — no color, just soft. Add the sliced garlic and cook one more minute, stirring constantly. Watch it — burnt garlic ruins this and there is no walking it back.

    Pour in the white wine and let it bubble hard for 90 seconds — you want the alcohol to cook off and the wine to reduce by about half. Add the stock and bring everything to a strong simmer.

    Add the mussels in one mound. Clamp the lid on, raise the heat to medium-high, and set a timer for 5 minutes. Resist the urge to stir or peek — they need the steam. After 5 minutes, lift the lid: most should be wide open. If a stubborn handful are still closed, lid back on for 1 more minute, max. Anything still sealed shut after that is out — pluck them and discard.

    Squeeze half the lemon over the pot — directly through your other hand to catch seeds. Scatter the parsley and chives across the top, crack black pepper generously, and finish with a small pinch of flaky salt. Slide the whole pot to the table or transfer everything to a wide, shallow bowl. Pour every last drop of broth over the top — that broth is the entire point. Serve immediately with the charred sourdough for sopping. Remaining lemon half goes on the side for anyone who wants more.
