Thai Mango Sticky Rice

Ingredients

  • 2 cup Thai sticky rice , soaked overnight (glutinous rice)
  • 1 can coconut milk (14 oz)
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 2 ripe mangoes (peeled and sliced)
  • sesame seeds for garnish
  • extra coconut cream for drizzling

Steps

    Drain soaked sticky rice and steam in a bamboo steamer or cheesecloth-lined colander over boiling water for 20-25 minutes until tender and translucent.

    While rice steams, heat coconut milk, sugar, and salt in a saucepan until sugar dissolves. Do not boil.

    Transfer hot rice to a bowl and pour 3/4 of the sweetened coconut milk over it. Fold gently and let sit covered for 15 minutes to absorb.

    Mound sticky rice on plates alongside sliced mango.

    Drizzle remaining coconut milk and extra coconut cream over the rice. Sprinkle with toasted sesame seeds.
