Ingredients
- 1 1/2 lb chicken breast (sliced into strips)
- 2 bell peppers (assorted colors; sliced)
- 1 onion (sliced)
- 2 tbsp avocado oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- juice of 1 lime
- 2 cup cauliflower rice, cooked
- 1 avocado (sliced)
- salsa (tomato, onion, cilantro, lime)
- lime wedges, for serving
Steps

Toss chicken strips with chili powder, cumin, paprika, garlic powder, onion powder, and salt.

Heat avocado oil in a large skillet over high heat. Cook chicken for 5-6 minutes until charred and cooked through. Remove and set aside.

In the same skillet, cook peppers and onion for 4-5 minutes until tender-crisp with some char.

Squeeze lime juice over the peppers.

Assemble bowls with cauliflower rice, chicken, peppers and onions, sliced avocado, and fresh salsa.

Serve with lime wedges.
