Ingredients

  • 8 oz semi-sweet chocolate, finely chopped
  • 3 tbsp unsalted butter
  • 3 large eggs, separated
  • 2 tbsp sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • pinch of salt
  • whipped cream and chocolate shavings, for topping

    Melt chocolate and butter together in a double boiler or microwave. Stir until smooth and let cool slightly.

    Whisk egg yolks into the cooled chocolate mixture, one at a time.

    Whip heavy cream with vanilla to soft peaks. Set aside.

    In a clean bowl, beat egg whites with salt until foamy. Gradually add sugar and beat to stiff peaks.

    Fold one-third of the whipped cream into the chocolate to lighten it. Then gently fold in the remaining cream.

    Gently fold in the egg whites in two additions until no white streaks remain.

    Divide among serving glasses. Refrigerate for at least 2 hours.

    Top with whipped cream and chocolate shavings before serving.
