Ingredients
- 2 cup masa harina
- 1 1/2 cup warm water
- 1/2 tsp salt
- 1 cup refried beans
- 1 1/2 cup mozzarella or Oaxacan cheese
- vegetable oil for cooking
- Curtido: 2 cups shredded cabbage, 1 carrot , 1/2 small onion , 1/2 cup white vinegar, 1 tsp dried oregano, salt (grated)
- tomato salsa for serving
Steps
- 1
Make curtido: toss cabbage, carrot, onion, vinegar, oregano, and salt. Refrigerate at least 30 minutes (better overnight).
- 2
Mix masa harina, warm water, and salt into a smooth dough. Let rest 10 minutes.
- 3
Divide dough into 8 balls. Flatten each into a thick disc, place a spoonful of beans and cheese in the center, and fold dough over to seal. Pat gently back into a thick disc shape, about 4 inches across.
- 4
Cook pupusas on a lightly oiled griddle or skillet over medium heat for 3-4 minutes per side until charred spots form and cheese begins to ooze.
- 5
Serve topped with curtido and tomato salsa.
