Ingredients

  • 2 cup masa harina
  • 1 1/2 cup warm water
  • 1/2 tsp salt
  • 1 cup refried beans
  • 1 1/2 cup mozzarella or Oaxacan cheese
  • vegetable oil for cooking
  • Curtido: 2 cups shredded cabbage, 1 carrot , 1/2 small onion , 1/2 cup white vinegar, 1 tsp dried oregano, salt (grated)
  • tomato salsa for serving

    Make curtido: toss cabbage, carrot, onion, vinegar, oregano, and salt. Refrigerate at least 30 minutes (better overnight).

    Mix masa harina, warm water, and salt into a smooth dough. Let rest 10 minutes.

    Divide dough into 8 balls. Flatten each into a thick disc, place a spoonful of beans and cheese in the center, and fold dough over to seal. Pat gently back into a thick disc shape, about 4 inches across.

    Cook pupusas on a lightly oiled griddle or skillet over medium heat for 3-4 minutes per side until charred spots form and cheese begins to ooze.

    Serve topped with curtido and tomato salsa.
