Ingredients

  • 4 cup day-old cooked jasmine rice
  • 2 tbsp kecap manis (sweet soy sauce)
  • 1 tbsp soy sauce
  • 1 tbsp sambal oelek or chili paste
  • 2 shallots (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 cup chicken breast or shrimp
  • 2 eggs
  • 2 tbsp vegetable oil
  • 1 cup cabbage
  • fried shallots (sliced cucumber, and prawn crackers for serving)

Steps

    Heat oil in a wok over high heat. Fry shallots and garlic until fragrant, about 30 seconds.

    Add chicken or shrimp and stir-fry until cooked through, about 3 minutes.

    Push protein to the side, crack eggs into the wok, and scramble them roughly.

    Add cold rice, cabbage, kecap manis, soy sauce, and sambal oelek. Toss everything together over high heat for 3-4 minutes until rice is heated through and slightly charred.

    Plate and top with fried shallots, cucumber slices, and prawn crackers.
