Low-Carb Peanut Butter Cookies

Ingredients
- 1 cup natural peanut butter
- 1/3 cup powdered erythritol or monk fruit sweetener
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- pinch salt
- sugar-free chocolate chips, optional

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Mix peanut butter, sweetener, egg, vanilla, baking soda, and salt until smooth.

Fold in chocolate chips if using.

Roll into 16 balls and place on the baking sheet. Press each with a fork in a crosshatch pattern.

Bake for 10-12 minutes until edges are golden.

Cool on the pan for 10 minutes (they firm up significantly). Transfer to a wire rack.
