Mediterranean Tuna Salad (No Mayo)

Ingredients
- 4 cans albacore tuna (5 oz each; drained)
- 1/2 cup Kalamata olives (halved)
- 1 cup cherry tomatoes (quartered)
- 1/2 English cucumber (diced)
- 1/4 red onion (finely diced)
- 2 tbsp capers (drained)
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 2 tbsp parsley (chopped)
- 1 tsp oregano
- salt and pepper, to taste
- butter lettuce cups or mixed greens, for serving

Flake tuna into a large bowl.

Add olives, tomatoes, cucumber, red onion, and capers.

Drizzle with olive oil, lemon juice, and red wine vinegar. Toss gently.

Season with parsley, oregano, salt, and pepper.

Serve over mixed greens or in butter lettuce cups.
