Ingredients

  • 4 cans albacore tuna (5 oz each; drained)
  • 1/2 cup Kalamata olives (halved)
  • 1 cup cherry tomatoes (quartered)
  • 1/2 English cucumber (diced)
  • 1/4 red onion (finely diced)
  • 2 tbsp capers (drained)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 2 tbsp parsley (chopped)
  • 1 tsp oregano
  • salt and pepper, to taste
  • butter lettuce cups or mixed greens, for serving
