Ingredients

  • 14 oz sweetened shredded coconut
  • 1 can (14 oz) sweetened condensed milk
  • 2 tsp vanilla extract
  • 2 large egg whites
  • 1/4 tsp salt
  • 4 oz semi-sweet chocolate, melted (optional, for dipping)

Steps

    Preheat oven to 325°F. Line baking sheets with parchment paper.

    Combine coconut, sweetened condensed milk, and vanilla in a large bowl.

    Beat egg whites and salt to stiff peaks. Fold gently into the coconut mixture.

    Drop rounded tablespoons of mixture onto the prepared baking sheets.

    Bake for 18-20 minutes until golden on top.

    Cool completely on a wire rack. Optionally, dip the bottoms in melted chocolate and place on parchment to set.
