Ingredients

  • 1 1/2 lb beef chuck, cut into 1.5-inch cubes
  • 2 potatoes (peeled and cut into chunks)
  • 2 carrots, cut into thick rounds
  • 1 onion, cut into wedges
  • 2 cup beef broth
  • 1 package Japanese curry roux blocks (about 4 oz)
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tsp ginger
  • steamed Japanese short-grain rice, for serving
  • fukujinzuke (pickled vegetables; optional)

Steps

    Using the sauté function, heat oil and brown beef cubes on all sides. Remove and set aside.

    Sauté onion wedges for 2 minutes. Add ginger and stir for 30 seconds.

    Return beef to pot. Add potatoes, carrots, beef broth, and soy sauce.

    Lock lid and cook on high pressure for 20 minutes. Natural release for 10 minutes.

    Break curry roux blocks into the pot and stir gently until fully dissolved and the sauce thickens.

    Serve curry over steamed rice with fukujinzuke on the side.
