Italian Caprese Panini

Ingredients
- 8 slices ciabatta bread or 4 ciabatta rolls, halved
- 8 oz fresh mozzarella, sliced
- 2 large tomatoes, sliced
- 1 cup fresh basil leaves
- 2 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- 1 tbsp pesto
- salt and freshly cracked black pepper
- butter for grilling
Steps

Spread pesto on one side of each sandwich. Drizzle olive oil on the other side.

Layer mozzarella, tomato slices, and basil leaves. Season with salt and pepper. Drizzle with balsamic glaze.

Close sandwiches and butter the outsides lightly.

Press in a panini press or cook in a skillet with a heavy pan on top for 3-4 minutes per side until bread is golden and cheese begins to melt.

Slice in half and serve warm.
