Ingredients

  • 2 cans young green jackfruit in water (20 oz each; drained and shredded)
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup BBQ sauce (check label for vegan compliance)
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 4 burger buns, toasted
  • coleslaw, for topping
  • pickle slices, for topping

Steps

  1. 1

Drain jackfruit and shred with two forks or your hands, removing any hard core pieces.

  2. 2

Heat olive oil in a large skillet over medium heat. Sauté onion until softened, about 4 minutes.

  3. 3

Add garlic, smoked paprika, cumin, chili powder, and salt. Cook 1 minute.

  4. 4

Add shredded jackfruit and toss to coat with the spices. Cook 5 minutes.

  5. 5

Pour in BBQ sauce, reduce heat to low, and simmer for 15 minutes, stirring occasionally, until jackfruit is very tender and saucy.

  6. 6

Pile onto toasted buns and top with coleslaw and pickles.

Save it, plan it, cook it.
