High-Protein Turkey Sausage Scramble

Ingredients
- 1 lb turkey sausage (sugar-free for Whole30)
- 6 eggs, beaten
- 2 cup baby spinach
- 1 cup mushrooms
- 1/2 cup tomatoes
- 2 cloves garlic (minced)
- 1 tbsp avocado oil
- 1/2 tsp paprika
- salt and pepper, to taste
- avocado slices, for serving

Heat avocado oil in a large skillet over medium-high heat. Cook turkey sausage, breaking into crumbles, for 5-6 minutes.

Add mushrooms and garlic, cook 2 minutes. Add tomatoes and spinach, cook until spinach wilts.

Pour beaten eggs over everything. Gently scramble until eggs are just set.

Season with smoked paprika, salt, and pepper.

Serve with avocado slices.
