Whole30 Thai Coconut Soup

Ingredients
- 1 lb chicken thighs (sliced)
- 1 can full-fat coconut milk (14 oz)
- 2 cup chicken broth
- 1 tbsp red curry paste (Whole30-compliant)
- 2 tbsp coconut aminos
- 1 tbsp lime juice
- 1 tbsp ginger (grated)
- 2 cloves garlic (minced)
- 8 oz mushrooms (sliced)
- 1 red bell pepper (sliced)
- 2 cup baby spinach
- cilantro and lime wedges, for serving
Steps

Bring coconut milk and chicken broth to a simmer in a pot.

Stir in curry paste, coconut aminos, ginger, and garlic. Simmer 5 minutes.

Add chicken and mushrooms. Cook for 10 minutes until chicken is cooked through.

Add bell pepper and spinach. Cook 2 more minutes until spinach wilts.

Stir in lime juice. Ladle into bowls and garnish with cilantro and lime wedges.
