Slow Cooker Italian Wedding Soup

Ingredients
- 1 lb chicken or turkey
- 1/3 cup panko breadcrumbs
- 1/4 cup parmesan cheese
- 1 egg
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- 6 cup chicken broth
- 2 carrots (diced)
- 2 celery stalks (diced)
- 1 onion (diced)
- 1 cup acini di pepe or orzo pasta
- 4 cup baby spinach
- salt and pepper, to taste
- parmesan for serving

Mix ground chicken, panko, parmesan, egg, garlic, Italian seasoning, salt, and pepper. Roll into 1-inch meatballs.

Place meatballs, broth, carrots, celery, and onion in the slow cooker.

Cover and cook on LOW for 5-6 hours (or HIGH for 3 hours).

During the last 30 minutes, stir in pasta and fresh spinach. Cover and cook until pasta is tender.

Serve topped with grated parmesan.
