Vegan Roasted Red Pepper Dip

Ingredients
- 1 jar roasted red peppers (12 oz; drained)
- 1 cup walnuts
- 2 cloves garlic
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp chili flakes
- 1/2 tsp salt
- parsley and a drizzle of olive oil, for topping
- vegetables or seed crackers, for serving

Blend roasted red peppers, walnuts, garlic, lemon juice, olive oil, cumin, smoked paprika, chili flakes, and salt in a food processor until smooth.

Taste and adjust seasoning — add more lemon for brightness or salt as needed.

Transfer to a serving bowl. Top with fresh parsley and a drizzle of olive oil.
