Halibut en Papillote with Herbs

Ingredients

  • 2 halibut fillets (6 oz each)
  • 1 lemon (thinly sliced)
  • 1 fennel bulb (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp capers
  • 4 sprigs thyme
  • 2 tbsp olive oil
  • 2 tbsp dry white wine
  • salt and pepper, to taste

    Preheat oven to 400°F. Cut two large heart-shaped pieces of parchment paper.

    On one half of each parchment heart, layer sliced fennel, then halibut fillet. Season with salt and pepper.

    Top each fillet with cherry tomatoes, capers, lemon slices, and thyme sprigs. Drizzle with olive oil and white wine.

    Fold the other half of the parchment over and crimp the edges tightly to seal into a packet.

    Place packets on a baking sheet. Bake for 12-15 minutes until packets are puffed.

    Place each packet on a plate. Cut open at the table to release the aromatic steam.
