Ingredients

  • 3 lb s chicken thighs and drumsticks
  • 6 green onions, roughly chopped
  • 4 cloves garlic
  • 1 Scotch bonnet pepper, seeded (or habanero)
  • 2 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp vegetable oil
  • 1 tbsp fresh thyme leaves
  • 1 tbsp allspice
  • 1 tsp cinnamon
  • 1 tsp black pepper
  • 1/2 tsp nutmeg
  • 1 tbsp brown sugar
  • 1 tsp salt
  • rice and peas, for serving

    Blend green onions, garlic, Scotch bonnet, soy sauce, lime juice, oil, thyme, allspice, cinnamon, pepper, nutmeg, brown sugar, and salt in a food processor until smooth.

    Score chicken pieces with a knife and coat thoroughly with the jerk marinade. Refrigerate for at least 2 hours or overnight.

    Preheat grill to medium-high heat (or oven to 400°F).

    Grill chicken for 35-45 minutes, turning occasionally, until internal temperature reaches 165°F and skin is charred in spots.

    If using the oven, place chicken on a wire rack over a baking sheet and roast for 40-45 minutes.

    Let rest 5 minutes before serving with rice and peas.
