Ingredients

  • 2 cup steel-cut oats (certified gluten-free if needed)
  • 4 cup water
  • 2 cup almond milk
  • 2 apples (peeled and diced)
  • 3 tbsp maple syrup
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • pinch salt
  • cooking spray
  • pecans, extra maple syrup, and almond butter for topping

Steps

    Spray the inside of the slow cooker with cooking spray to prevent sticking.

    Add oats, water, almond milk, diced apples, maple syrup, cinnamon, nutmeg, and salt. Stir to combine.

    Cover and cook on LOW for 7-8 hours (overnight is perfect).

    In the morning, stir well — the oats will be thick and creamy.

    Serve in bowls topped with chopped pecans, a drizzle of maple syrup, and a spoonful of almond butter.
