Filipino Ube Halaya (Purple Yam Jam)

Ingredients

  • 2 lb purple yam (ube; peeled, boiled, and mashed)
  • 1 can coconut milk (14 oz)
  • 1 can condensed milk (14 oz)
  • 1/2 cup butter
  • 1/2 tsp ube extract (optional, for color)
  • pinch salt
  • coconut flakes for garnish

Steps

    Combine mashed ube, coconut milk, and condensed milk in a large heavy-bottomed saucepan.

    Cook over medium-low heat, stirring constantly with a wooden spoon, for 20-25 minutes.

    Add butter a tablespoon at a time, continuing to stir as the mixture thickens.

    When the halaya pulls away from the sides of the pan and holds its shape, remove from heat. Stir in ube extract if using.

    Spread into a lightly greased dish or mold. Let cool, then refrigerate until set.

    Serve topped with toasted coconut flakes. Can be enjoyed as a spread, filling, or eaten on its own.
