Vegan Sweet Potato and Black Bean Chili

Ingredients
- 2 tbsp olive oil
- 1 onion (diced)
- 4 cloves garlic (minced)
- 2 sweet potatoes (peeled and cubed)
- 2 cans black beans (15 oz each; drained and rinsed)
- 1 can tomatoes (28 oz)
- 2 cup vegetable broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt
- juice of 1 lime
- cilantro and diced avocado, for topping

Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.

Add garlic, chili powder, cumin, smoked paprika, and cayenne. Cook 1 minute.

Add sweet potatoes, black beans, crushed tomatoes, broth, and salt.

Bring to a boil, then reduce to a simmer. Cook for 25-30 minutes until sweet potatoes are tender.

Stir in lime juice. Adjust seasoning.

Serve topped with fresh cilantro and diced avocado.
