Cajun Shrimp and Grits

Ingredients

  • 1 1/2 lb shrimp (peeled and deveined)
  • 2 tsp Cajun seasoning
  • 4 slices thick-cut bacon (diced)
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • juice of 1 lemon
  • 2 tbsp butter
  • 4 cup water
  • 1 cup stone-ground grits
  • 1 cup milk
  • 1 cup sharp cheddar cheese, shredded
  • salt and pepper, to taste
  • green onions for garnish

    Bring water to a boil, stir in grits and milk. Reduce heat to low and cook, stirring often, for 20 minutes until thick and creamy. Stir in cheddar, salt, and pepper. Keep warm.

    While grits cook, fry bacon in a skillet until crispy. Remove bacon, leaving the drippings.

    Season shrimp with Cajun seasoning. Cook in bacon fat over medium-high heat for 2 minutes per side. Remove shrimp.

    Sauté garlic for 30 seconds, then deglaze with chicken broth and lemon juice. Simmer until reduced by half.

    Stir in butter, return shrimp and bacon to the skillet, and toss to coat.

    Spoon cheesy grits into bowls, top with shrimp and sauce, and garnish with green onions.
