Thai Larb Lettuce Wraps

Ingredients
- 1 lb ground chicken or pork
- 3 tbsp fish sauce
- 2 tbsp fresh lime juice
- 1 tbsp soy sauce
- 1 tsp chili flakes, or to taste
- 1 tsp sugar
- 1 shallot, thinly sliced
- 3 green onions, sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro
- 2 tbsp toasted rice powder
- 1 head butter lettuce, leaves separated
- lime wedges, for serving

Cook ground meat in a skillet over medium-high heat, breaking into fine crumbles, until no longer pink. Drain any excess fat.

Remove from heat and stir in fish sauce, lime juice, soy sauce, chili flakes, and sugar.

Toss in shallot, green onions, mint, cilantro, and toasted rice powder.

Spoon the larb mixture into butter lettuce cups.

Serve with lime wedges on the side.
