- 1/3 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp white vinegar or pickle juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- smoked paprika, for garnish
- fresh chives or dill, for garnish

Place eggs in a single layer in a pot and cover with cold water. Bring to a boil, then cover, remove from heat, and let sit for 12 minutes.

Transfer eggs to an ice bath. Peel when cool enough to handle.

Slice eggs in half lengthwise. Scoop yolks into a bowl.

Mash yolks with mayonnaise, Dijon, vinegar, salt, and pepper until smooth.

Pipe or spoon the filling back into the egg white halves.

Sprinkle with paprika and garnish with chives or dill.
