Ingredients
- 4 eggs, soft-boiled and peeled
- 1 lb pork sausage meat
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1 cup panko breadcrumbs
- 1 tsp sage
- 1/2 tsp thyme
- salt and pepper, to taste
- cooking spray
- grain mustard, for serving

Divide sausage meat into 4 equal portions. Flatten each into a thin patty.

Wrap each soft-boiled egg completely with a sausage patty, sealing all edges smoothly.

Roll each wrapped egg in flour, dip in beaten egg, then coat in panko mixed with sage and thyme.

Spray all sides with cooking spray and place in the air fryer basket.

Air fry at 375°F for 12-15 minutes, turning halfway, until sausage is cooked through and coating is golden and crispy.

Let rest 2 minutes, then slice in half. Serve with whole grain mustard.
