Ingredients

  • 1 1/2 cup steel-cut oats
  • 3 1/2 cup water
  • 1/2 cup coconut milk
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • pinch salt
  • berries (sliced banana, and chopped walnuts for topping)
  • maple syrup for drizzling

    Add steel-cut oats, water, coconut milk, brown sugar, vanilla, cinnamon, and salt to the pressure cooker. Stir to combine.

    Lock the lid and set to high pressure for 10 minutes.

    Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.

    Stir the oatmeal — it will thicken as it sits.
