Ingredients

  • 2 ripe bananas
  • 4 large eggs
  • 1/2 cup oat flour (or blended oats)
  • 1 scoop vanilla protein powder
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • coconut oil or butter for cooking
  • slice d banana, berries, and maple syrup, for topping
  • almond butter, for drizzling

Steps

    Mash bananas in a bowl until smooth. Whisk in eggs.

    Add oat flour, protein powder, cinnamon, and baking powder. Mix until just combined.

    Heat a non-stick skillet with a small amount of coconut oil over medium-low heat.

    Pour 1/4 cup batter per pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook 1-2 more minutes.

    Serve stacked with sliced banana, berries, a drizzle of almond butter, and maple syrup.
