Air Fryer Coconut Shrimp Tacos

Ingredients
- 1 lb shrimp (peeled and deveined)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup coconut
- 1/2 cup panko breadcrumbs
- 8 flour tortillas
- 1 cup purple cabbage
- 1 mango (diced)
- 1 jalapeño (thinly sliced)
- juice of 2 limes
- 2 tbsp sriracha mayo

Set up a breading station: flour in one bowl, beaten eggs in another, and coconut mixed with panko in a third.

Dredge each shrimp in flour, dip in egg, then press into the coconut-panko mixture.

Place breaded shrimp in the air fryer basket in a single layer. Spray with cooking spray.

Air fry at 400°F for 8-10 minutes, flipping halfway, until golden and cooked through.

Toss cabbage with lime juice. Warm tortillas briefly in the air fryer for 30 seconds.

Assemble tacos with shrimp, purple cabbage slaw, diced mango, jalapeño slices, and a drizzle of sriracha mayo.
