Ingredients

  • 6 oz semi-sweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup powdered sugar
  • 2 whole eggs
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour (or cocoa powder for GF)
  • pinch of salt
  • butter and cocoa powder, for ramekins
  • vanilla ice cream, for serving

    Preheat oven to 425°F. Butter 4 ramekins generously and dust with cocoa powder.

    Melt chocolate and butter together in a double boiler or microwave (in 30-second intervals). Stir until smooth.

    Whisk in powdered sugar until combined. Add whole eggs and yolks, one at a time, whisking after each.

    Stir in vanilla, flour, and salt until just combined.

    Divide batter among the prepared ramekins.

    Bake for 12-14 minutes. The edges should be firm but the center should still be soft.

    Let cool for 1 minute. Run a knife around the edges and invert onto plates.

    Serve immediately with a scoop of vanilla ice cream. The center should ooze molten chocolate.
