Avocado Toast with Poached Eggs

Ingredients
- 4 slices thick sourdough bread, toasted
- 2 ripe avocados
- 4 large eggs
- 1 tbsp white vinegar
- 1 tbsp lemon juice
- 1/4 tsp red pepper flakes
- flaky sea salt and black pepper
- everything bagel seasoning, optional
- microgreens or sprouts, for topping
Steps

Mash avocados with lemon juice, a pinch of salt, and pepper.

Bring a pot of water to a gentle simmer with vinegar. Poach eggs for 3-4 minutes until whites are set.

Spread mashed avocado generously on each slice of toasted sourdough.

Top each with a poached egg.

Sprinkle with red pepper flakes, flaky sea salt, everything bagel seasoning, and microgreens.
