Ingredients

  • 2 sweet potatoes (peeled and diced into 1/2-inch cubes)
  • 1 lb breakfast sausage (sugar-free for Whole30)
  • 1 tbsp avocado oil
  • 1 onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • 1/2 tsp cumin
  • salt and pepper, to taste
  • 4 eggs
  • parsley or chives, for garnish
  • hot sauce, for serving

Steps

    Heat avocado oil in a large cast iron skillet over medium heat. Add sweet potatoes and cook 10-12 minutes, stirring occasionally, until tender and golden.

    Push potatoes to the side. Add sausage and cook, breaking into crumbles, until browned.

    Add onion, bell pepper, garlic, smoked paprika, and cumin. Cook 3-4 minutes until vegetables soften.

    Make 4 wells in the hash. Crack an egg into each well.

    Cover and cook 5-6 minutes until egg whites are set but yolks are still runny.

    Garnish with parsley and serve with hot sauce.
