Ingredients

  • 2 cans chickpeas (15 oz each; drained, rinsed, and patted very dry)
  • 2 tbsp coconut oil (melted)
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 tbsp coconut

    Preheat oven to 400°F. Pat chickpeas as dry as possible.

    Toss with coconut oil, curry powder, turmeric, cumin, cayenne, and salt.

    Spread on a parchment-lined baking sheet in a single layer.

    Roast for 25 minutes, shaking the pan halfway.

    Add shredded coconut, toss, and roast 5 more minutes until coconut is toasted and chickpeas are very crispy.

    Let cool before eating. Best enjoyed same day.
