- 8 cup s chicken broth
- 2 cup s water
- 8 oz ground pork
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp fresh ginger, grated
- salt and white pepper to taste
- slice d green onions, for topping
- crispy fried shallots, for topping
- sesame oil drizzle, for topping
- soy sauce, for serving

Combine rinsed rice, chicken broth, and water in a large pot. Bring to a boil.

Reduce heat to low, cover with the lid slightly ajar, and simmer for 1 to 1.5 hours, stirring occasionally, until rice breaks down into a thick porridge.

Season ground pork with soy sauce, sesame oil, and ginger. Form into small meatballs or crumble into the congee.

Add pork to the congee during the last 15 minutes of cooking, stirring to cook through.

Season congee with salt and white pepper to taste.

Ladle into bowls and top with green onions, crispy shallots, a drizzle of sesame oil, and soy sauce.
