Ingredients

  • 6 eggs
  • 3 tomatoes (diced)
  • 2 Turkish green peppers (or Anaheim peppers; diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp Aleppo pepper flakes (or paprika)
  • 1/2 tsp cumin
  • 2 tbsp olive oil
  • 1/2 cup feta cheese
  • parsley and crusty bread for serving
  • salt and pepper, to taste

Steps

  1. 1

Heat olive oil in a skillet over medium heat. Sauté onion and peppers for 4 minutes until softened.

  2. 2

Add garlic, Aleppo pepper, and cumin. Cook 30 seconds.

  3. 3

Add diced tomatoes, salt, and pepper. Simmer for 5 minutes until tomatoes break down into a chunky sauce.

  4. 4

Crack eggs directly into the sauce, spacing them apart. Cover and cook 4-5 minutes until whites are set but yolks are still runny.

  5. 5

Crumble feta over the top and sprinkle with parsley.

  6. 6

Serve straight from the skillet with crusty bread for scooping.

Save it, plan it, cook it.
